Cajan Pepper Scrambled Eggs with all the extras

Fact: cajan pepper has the ability to make every single one of your tastebuds tingle.

It’s that good. Especially when you combine it with some perfectly cooked scrambled eggs, crispy bacon and fresh avocado on a beautifully toasted bagel.img_6642What you’ll need:

2 fresh, free-range eggs
2 strips of unsmoked bacon
1/2 an avocado
1 handful of spinach
1/2 a bagel
salt
cajan pepper

What to do:

1. Stick your bacon on a tray under a medium grill and cook until crispy
2. Crack two eggs into a cup and whisk until the yolks and whites are combined
3. Season with salt and cajan pepper
4. Pour your seasoned eggs into a well oiled, preheated frying pan
5. Stir frequently until the eggs start to gather, when half-way cooked remove from the heat
6. Put your bagel into the toaster
7. While the bagel toasts, continue to stir the eggs and then return to heat to finish them off
8. Once your eggs are amply scrambled and your bacon sufficiently crispy, get ready to plate
9. Start with your bagel, then cover with a layer of scrambled eggs, top with spinach and next add the bacon. Finally, finish with half an avocado sliced and de-skinned
10. Sprinkle some cajan pepper over your masterpiece, now tuck in
