Alpine Inspiration: Apple and Apricot Puffy Pastry Pie

10609125_10203691937792304_1065390872_n-2A week in France left me craving these apple puff pastry squares. They were the only sweet the bakery next to our apartment sold and I was desperate to recreate them upon returning home.

I guessed, from taste alone, that they are a delicious mix of apricot jam, sweet apples and puff pastry. My version, however, wasn’t quite as successful. The pastry wasn’t as light, but the flavours were there, so it’s now just a case of tweaking my technique and maybe ingredients.
