Mango Chicken with A Brie and Pomegranate Salad

Some bad news ruined my day, but thankfully some good food and V were on hand to make it seem a little bit better.

Above, I give you: our ultimate summer salad. Watercress, spinach, rocket and lamb chard leaves were tossed with pomegranate seeds, sliced brie and chopped cucumber. Then after marinating in some mango, chilli and lime sauce, the chargrilled sliced chicken breast was placed on top. To cook the chicken, I turned to my grill pan and again I was left frustrated. It’s so bad, and the chicken took ages to cook – lesson learnt, do not buy your pans from Wilkinson’s.

Also, on another note, I plated it up on my little side plates from uni because mum has orange plates at home and, like the grill pan, they’re just not where it’s at. So yes, in case you’re wondering we did actually eat more than this. There’s a whole bowl of messy salad mix just out of shot.
